BOLOGNA SALAD SANDWICH SPREAD

This recipe has been in my family for years – it is one of those things I just make and never measure – I do that a lot…HaHa!!!! The amount of egg, creamy salad dressing, relish and cheese should be adjusted to taste. My mom never used cheese – my family loves cheese so cheese is a must for us! Serve it on crackers, cocktail toast or use it in sandwiches.

1lb. Bologna – (Use a chunk of bologna – not sliced)
1 – 1-1/2 cups Miracle Whip (maybe more)
1/2 – 3/4 cup Sweet Pickle Relish (depends on your taste)
3/4 cup Shredded Cheese (Colby-Jack/Double Cheddar)
4 eggs – Hard Boiled and Diced (Optional)

Grind the bologna in a meat grinder with a medium blade. In a large bowl, mix the bologna and eggs (if using) with desired amount of creamy salad dressing, sweet pickle relish and cheese. Refrigerate 2 to 3 hours, or until chilled.
