JOSE TACO

Jose Taco Night is a YUMMY night! I make a batch of this and everyone has their own way of eating it! My husband and son like taco shells/burrito wraps, the girls and I tend to like taco salads. A lot of times I find the kids making nacho for snacks and sometimes even a meal! No matter which way you serve these the Jose Taco mixture is delicious!

This is ALWAYS my standard meat for Taco anything! Depending on which way you choose to serve it – it makes a GREAT meal or dip! I like using this recipe in my crockpot – using the crockpot makes it nice for parties/holidays ~ it frees up your stove and it stays warm!

There are so many possibilities with this recipe! Place the mixture in flour tortillas for a burrito, tacos, taco salad, walking tacos, dip — OR — To make Jose Taco Soup, add a 29-ounce can of tomato sauce to the slow cooker. It will serve 6-8. — OR — For an ever-better dip – add a jar of Salsa Cheese Queso.

2LB. Ground Beef, Browned and drained
Pepper, Garlic Salt and Minced Onions for seasoning

1 Cup Onion, diced
3/4 Cup Green, Red, Yellow or Orange Pepper, diced

Once ground beef is browned – drain any excess grease – return to stove/place meat in crock pot. Add kidney beans, black beans, tomato sauce, green chilies, taco seasoning, onions and peppers AND if you choose to use the rice add it now. Mix well cook on low 20-30 minutes or longer – stir occasionally. Prior to serving stir in 2 cups shredded cheese.

Crock Pot: In a 5-qt. crockpot or larger, combine browned ground beef, kidney beans, black beans, tomato sauce, green chilies, taco seasoning, onions and peppers AND if you choose to use the rice add it now. Cover and cook on low for 5-7 hours. Prior to serving stir in 2 cups shredded cheese.
