PASTA WITH BACON/PANCETTA AND LEEKS

All of these ingredients mixed together spells — DELICIOUS!!!! 

1lb. Farfalle Pasta, Cooked Al Dente

1lb. Bacon/Pancetta, Chopped

 2-3 Leeks – White and Green parts, Sliced Thin

 3 Tablespoon Butter

1 Cup Chicken Broth

1 teaspoon Chicken Base

1 Cup Heavy Whipping Cream

5 oz. Parmesan and Romano Cheese, Shredded

Freshly Ground Pepper, to taste

Cook pasta and set aside. Sauté chopped pancetta/bacon until fat is rendered and it starts to brown – drain and set aside.  Use 2-3 Tablespoons of the bacon grease; add sliced leeks and butter – cook for 8 minutes on medium low.  Add in the cooked bacon, chicken broth, chicken base, pepper and cream; cook an additional 1-2 minutes.  Reduce heat to low, then stir in Parmesan and Romano Cheese and Toss in pasta.  Mix well and serve!
